For the chicken marinade:
Soy sauce
4 tbsp
Sugar
2 tbsp
Warm water

For the rice sauce:
Oyster sauce
4 tbsp
Fish sauce
3 tbsp
Soy sauce
3 tbsp

1 tbsp
Preparation
Prepare the marinade
Prepare the marinade for the chicken: add all the ingredients to a bowl and mix well.
Marinate the chicken
Cut the chicken breast into small cubes and leave it to marinate in the fridge for 10 minutes.
Prepare the sauce
Meanwhile, prepare the sauce for the rice: add all the ingredients to a bowl and mix well.
Cook the chicken and eggs
Discard the marinade from the chicken. Heat a drizzle of avocado oil in a frying pan and stir-fry the chicken for a few minutes.
In the same pan, add another drizzle of avocado oil and scramble the eggs.
Stir-fry the rice
Next, sauté the chopped onion and chilli with a little oil, then add the rice and the sauce.
Stir-fry for a few minutes, then add the chicken, eggs and your favourite seasonal vegetables.
The finishing touch
Add the lime juice and serve.
CHEF'S TIP
Best made with leftover rice from the day before. You can also enhance it with lime, pineapple or crunchy vegetables.
