Soup of
St. Nicholas

A healthy soup suitable for young and old.


200 g spelled
400g peeled tomatoes or tomato sauce
1 onion
1 celery
1 carrot
2 potatoes
extra virgin olive oil


In a large pot, sauté a chopped celery, carrot and onion with a generous drizzle of oil. Add the tomato, add the water and cook.

When the soup boils, put the diced potatoes and spelled to cook. The soup, at this point, must cook for a long time, almost an hour, until the spelled is cooked. We finish with a drizzle of raw oil.
