Chickpea and
carrot burger

Chickpea and carrot burgers for those who want to keep in line


125 g chickpeas
2 carrots
1 shallot
2 tablespoons of breadcrumbs
2 eggs
extra virgin olive oil
oil for frying

2 sandwiches
sliced cheese
salad and tomatoes and mayonnaise


In a pan, sauté the chopped shallot with a drizzle of extra virgin olive oil. We also add the previously blanched diced carrots and finally the precooked chickpeas. After 10 minutes of cooking, transfer everything to a mixer, add the egg and whisk. After a few moments, add a little breadcrumbs, salt and pepper and whisk again.

Once the mixture is firm and not too refined, we form the hamburgers with wet hands or the special tool. Cook in a pan with 1 finger of hot oil. They must brown on both sides. We salt at the end of cooking.

We insert the hamburger inside the special sandwich, with salad, tomatoes, mayonnaise and stringy cheese.
